Okay, I understand the basic k2tog, yo but how do I work it into my 1x1 ribbing? Does the yo come right before a knit or purl stitch? kwim?
k1, p1, yo, k2tog? or k1, p1, k2tog, yo?

With ribbing you want to knit the knits and purl the purls, so I would say do the yo on a purl stitch and the k2tog on a knit stitch and you will be fine.
Your second list would accomplish that (k1, p1, k2tog, yo).
